Cozy Postpartum Kitchari

For those looking for some extra postpartum nutrients (especially if you gave birth in the colder months)? this will be your comforting go to. This protein packed, nourishing meal is amazing for the physical and emotionally draining aspects of the first few months with a newborn. It helps reduce inflammation, support digestion and promotes vitality! 


Ingredients:

-2 C. Water

-1/2 C. Red or yellow lentils 

-1/2 C. Quinoa or rice

-2 Tbsp. Ghee or coconut oil

-1Tsp. Ground turmeric

-1 Tsp. Ground cumin

-1 Tsp. Ground coriander 

-1 Tsp. Ground mustard seed

-1 Tsp. Salt

-1/4 C. Coconut milk

 Veggies cooked: 

1 small chopped carrot 

Handful of broccoli 

Handful of cubed zucchini 

Handful of cubed red beet

Handful of cubed sweet potato 

Handful of chopped fennel root

(Add any other veggies you enjoy) 

Top with dashes of chopped cilantro and fennel

 -Directions:

-Bring 2 cups of water to a boil

-Rinse lentils and rice or quinoa under water until water runs clear then add to the boiling water. Put on simmer and cover for 15 minutes or until fully cooked 

-Add ghee, spices and coconut milk to the lentils and let simmer all together. 

-Add cooked veggies and top with cilantro 

-Add more spices, coconut milk or different veggies as you please!
